7 grain almost healthy pancakes


I like to google stuff. Best chocolate chip cookies. Best kimchi. Best pancakes. Once I found this recipe on google. I tweaked it a bit to add some fiber and protein so I could in good conscious feed these to my pancake FIEND daughter before school. They only use one bowl. Take less than 20 minutes to assemble and cook. Not bad for a Friday morning. 

almost healthy 7 grain pancakes

1 cup AP flour
1/2 cup 7 grain flour (I use Great River Milling)
1 tbsp baking powder
1/4 cup sugar
1/2tsp salt
1 1/4 cups milk (I used Kirkland unsweetened vanilla almond milk)
3 Tbsp oil (I used melted coconut oil but could use any neutral oil or melted butter)
1 egg beaten
2T butter or oil for griddling

combine all dry ingredients
whisk to combine
add milk, oil, and egg and stir to combine
cook over medium low in a preheated cast iron skillet until bubbles form in the middle, about 2-3 minutes. flip and cook one more minute until golden.
