cheesy spinach artichoke dip 4sp

4sp per 1/3 cup 

1 10oz box frozen spinach, thawed and drained
1 can artichoke hearts in water, drained and chopped
5oz grated part skim mozzarella (if you can find smoked mozzarella use it!)
1/3cup grated high quality Parmesan (look for the real stuff. The flavor is worth the $)
1/4cup light mayo (I use The Ojai Chef Lemonaise Light)
2oz Neufchâtel (or light cream cheese)
Juice of 1/2 a lemon
2tsp Dijon mustard
1/4 tsp crushed red pepper flakes
One large shallot, minced
3 cloves of garlic minced 
1/2tsp kosher salt
Pepper to taste

Preheat oven to 350
In a sauté pan over medium heat, soften the shallots in 1tsp oil. 
When softened, add minced garlic and sauté until garlic is fragrant, about 1-2 minutes
Turn heat off and in a large bowl, combine all ingredients and mix welll.
Transfer to an oven safe baking dish and bake 20-25 minutes until everything is melty and browned 

Serve with toast points, tortilla chips, or even veggies. I used my garlic breadsticks.
