Skinny breakfast pizza
I woke up this morning thinking about pizza. I’ve used the 2 ingredient dough before as pizza crust and knew that part would work but DAMN THIS WAS DELICIOUS!
A couple of notes on this pizza dough. It’s sticky. Use WET HANDS when pressing it out. It seems too sticky but I promise it’s not. Wet and rewet your hands and get the dough spread out onto a greased baking sheet.
Also this is super easy to customize to whatever you have on hand. Get creative! So yummy.
SKINNY BREAKFAST PIZZA
Makes 8 servings
4sp per slice
2 cups all purpose flour
1TBSP baking powder
1.5tsp kosher salt
2cups nonfat plain Greek yogurt
2 slices turkey bacon, sliced into pieces
1/2 small red onion, thinly sliced
10 mushrooms sliced
1.5oz REAL Parmesan cheese (do not use the shaky stuff for this. You need the real stuff. I like the shave mine on a micro plane. You do not need much cheese to get lots of flavor if you use the good stuff)
10 cherry tomatoes, halved
1 clove of garlic thinly sliced
3-5 eggs (depends on your preference, add as many as you want)
Chopped parsley for garnish
Preheat oven to 400 degrees
Whisk together flour, baking powder and salt. Add in Greek yogurt and mix with your hands. This will feel sticky. It’s ok! Use wet hands to spread the dough out 1/2inch thin onto a greased baking sheet.
Top with mushrooms, onion, tomato, and turkey bacon. Grate Parmesan over the top.
Bake for 15-20 minutes until ALMOST cooked. Edges should be browned but middle should still be soft.
Crack eggs onto the top of the pizza. Season with salt and pepper and return to the oven until egg whites are set. 5-7 minutes. Check these frequently to ensure the runny yolks, or cook a little longer to have no yolk running,
Sprinkle with parsley and ENJOY!
