sneaky blondies

Spoiler alert, these have chickpeas in them. Another spoiler alert, YOU WOULD NEVER FREAKIN KNOW AND THEY ARE SO CRAZY DELICIOUS!!! And easy to boot. Kid and husband approved. 


Makes 9 servings
1SP each

1 15oz can chickpeas, drained
1/3 cup all purpose flour
1tsp baking powder
1/4tsp baking soda
1/4 tsp salt
2/3 cup Lakanto Monkfruit sweetener
2tsp olive oil
1tsp vanilla
1 egg
2T Lily’s baking chips

Preheat oven to 350 convection or 375 regular

In a food processor, combine the drained chickpeas, flour, baking powder and soda, salt, vanilla, sweetener, and oil.

Process until a smooth paste is formed

Remove from processor into a medium bowl

Stir in 1 egg until combined

Pour mixture into a greased 8x8 baking dish and sprinkle with chocolate chips. Press the chips down slightly into the batter

bake 18-20 minutes. They should still feel soft in the middle but golden.

Let cool to room temp. Slice and OMG ENJOY
