Banana bread cookies



BANANA BREAD COOKIES
MAKES 12
1SP EACH

3 mashed bananas
2/3 cup flour
2tsp baking powder
1/2 tsp cinnamon
1/4tsp salt
1/4 cup Lakanto Monkfruit Sweeteber (or calorie free sweetener of your choice)
1 egg
1 tbsp canola oil

Preheat oven to 350 convection or 375 regular

Prepare a sheet pan lined with parchment or a silicon baking mat

In a large bowl mash the bananas. Add salt, oil and monkfruit sweetener. Mix well and add one egg and mix to combine. Add dry ingredients and mix just to combine. 

Using a tablespoon, spoon batter onto prepared baking sheet and bake 8-10 minutes until golden brown.

These are good warm, but best when they have cooled.


Alternatives:

If you don’t want to use the monkfruit sweetener, it can be replaced by regular sugar or maple syrup and the cookies will still only be 2sp each!
