chewy no bake peanut butter chocolate chip granola bars

I hate waste. Individually wrapped things make me cringe every time. But my kids LOVE granola bars. Here’s my answer to this conundrum. This recipe is flexible as hell. Use almond butter. Replace chocolate with dried fruit or nuts. I love the texture that the crispy rice gives, and just a LIIIIITLE peanut butter adds a richness that I love. 


1.5 cups rolled old fashioned oats
2.5 cups puffed rice cereal
1/2 cup shredded unsweetened coconut
1/3 cup honey
1/4 cup peanut butter
1/2 tsp kosher salt
1/4 cup coconut oil
1/4 tsp cinnamon
1/2 cup mini chocolate chips (I used Lily’s baking chips)

Preheat oven to 350
On a sheet pan, toast the oats and coconut and for 5 mins

In a small sauce pan, combine honey, salt, cinnamon, peanut butter, and coconut oil. Heat over medium heat until all ingredients are melted and combined.

Mix with the toasted oats and coconut, and add crispy rice cereal. Mix well until everything is coated with the wet ingredients.

Cool this mixture to room temp. Stir in chocolate chips. Press into a pan lined with parchment paper or foil.  Chill at least 2.5 hours, cut into bars and store in the fridge.
